ZUPPA TOSCANA(TUSCAN SOUP)

Hi Friends~Happy Monday!  Today I have a true comfort food recipe for you…Zuppa Toscana.  It is one of my favorite soups to make and also to order whenever I visit Olive Garden.  It is super easy to make at home and is basically a spicy potato soup.  It is made with potatoes, spicy Italian sausage, bacon and kale.  So.Darn.Good!  It is sure to warm you up on a cold winter day!!

Ingredients
  • 1 lb Hot Italian sausages,casings removed
  • 6-8 oz smoked bacon,chopped *(use half of a 12-16oz bacon package)
  • 4-6 medium potatoes(red, gold, or russets),sliced
  • 1 medium onion,diced
  • 2 cloves fresh garlic-minced
  • 2 cups chopped Kale
  • 1 32oz box chicken broth
  • 1 cup heavy cream
  • 4 cups water
  • 2 tbsp butter
  • salt and pepper, to taste
  • pinch red pepper flakes * (to taste, depends how spicy sausage is)

Instructions
  1. Brown sausage and bacon in a skillet until cooked and no pink remains. Remove to paper towel lined plate to drain. Combine water and chicken broth in a large dutch oven. Add sliced potatoes and onions and bring to a boil over medium heat for aprox. 15 minutes. Add in the minced garlic, cooked sausage and bacon, simmer for about 10 minutes. Lastly, add in cream, butter, and chopped kale. Season with salt and pepper to taste and simmer for another 10 minutes over med-low heat. Enjoy served with crusty bread!
