BLUEBERRY LEMON SCONES

Hi Guys~Happy Monday!  I hope everyone had a fabulous weekend!  School was out on Friday here, so we had an extra long weekend of fun.  I managed to sneak in a little baking of course.  These blueberry scones are one of our family’s favorites and everyone that eats one loves them. They are easy to make and are super yummy for breakfast or dessert.  The recipe is an adapted version of a Tyler Florence recipe.  I tend to like Tyler’s recipes, there is just something wonderful about those southern boys that cook! Hehe!  You can find his version of the scones Here!

Just look at that yummy lemon glaze running off the scones…lets get baking…

Ingredients gathered…I mixed the flour, baking powder, and salt in the bowl.   I diced the butter into cubes and put them in the freezer for a few minutes to get really cold.  Blueberries and cream and that is it…easy peasy!

I cut the butter into the flour mixture with a pastry cutter to resemble course crumbs, then added the blueberries gently (so not to burst the berries!)  and made a well in the center and added in the heavy cream.  When it came together I scooped it out on a piece of parchment paper and formed a 12 inch by 3 inch rectangle.

12 x 3 inches~ we are ready to cut into scones!

Using a sharp knife cut dough in half and then cut those two in half again.  You will have 4 squares.  Now, cut each of those squares on the diagonal to make 2 scones each.  You will have 8 scones total.

Cute little scone shapes!  Now, place them a couple of inches apart on a parchment paper lined baking sheet.

Brush the tops with a little extra heavy cream.  Bake in a 400 degree oven for about 15-18 minutes.

While the scones are baking you can make the glaze.  Just melt 1 Tablespoon of butter in the microwave in a medium bowl.  Add in about 1- 1/2 cups of powdered sugar and whisk together with the zest and juice of 1 fresh lemon.   When scones are done, cool for a few minutes and then pour glaze over tops of scones…stick fingers in glaze and taste a few times! Emmm!  😉

Ingredients
For Scones:
  • 2 cups flour
  • 2 Tbls sugar
  • 1 Tbls baking powder
  • 1/2 tsp salt
  • 5 Tbls cold butter, small diced
  • 1 1/4 cups heavy cream *plus extra for brushing tops of scones
  • 1/2 cup fresh or frozen blueberries
For Glaze:
  • 1 Tbls butter
  • 1 1/2 cups powdered sugar
  • juice of 1 lemon
  • zest of 1 lemon

Instructions
For Scones:
  1. In large bowl mix together flour, sugar, baking powder, and salt. Using a pastry cutter, cut in cold butter until mixture resembles coarse crumbs. Gently fold in blueberries. Make a well in the center; pour in heavy cream and gently combine until mixture comes together. Pour dough out on a floured board or parchment paper and pat into a 12x3 in rectangle. Cut dough in half and cut each piece in half again. You will have 4 squares. Cut each square on the diagonal to form 8 scones total. Place on parchment lined baking sheet and brush tops with heavy cream. Bake at 400 degrees for about 15-18 minutes. While scones are baking make the glaze.

    Thanks Jacque they sound really good and easy to make. I will make them and let you know how they turned out. You know me, I would rather bake than cook a meal. I know Jerry will love them. Hug the kids for me.
