BLUEBERRY LEMON SCONES

Ingredients
For Scones:
  • 2 cups flour
  • 2 Tbls sugar
  • 1 Tbls baking powder
  • 1/2 tsp salt
  • 5 Tbls cold butter, small diced
  • 1 1/4 cups heavy cream *plus extra for brushing tops of scones
  • 1/2 cup fresh or frozen blueberries
For Glaze:
  • 1 Tbls butter
  • 1 1/2 cups powdered sugar
  • juice of 1 lemon
  • zest of 1 lemon

Instructions
For Scones:
  1. In large bowl mix together flour, sugar, baking powder, and salt. Using a pastry cutter, cut in cold butter until mixture resembles coarse crumbs. Gently fold in blueberries. Make a well in the center; pour in heavy cream and gently combine until mixture comes together. Pour dough out on a floured board or parchment paper and pat into a 12x3 in rectangle. Cut dough in half and cut each piece in half again. You will have 4 squares. Cut each square on the diagonal to form 8 scones total. Place on parchment lined baking sheet and brush tops with heavy cream. Bake at 400 degrees for about 15-18 minutes. While scones are baking make the glaze.
For Glaze:
  1. Melt 1 Tablespoon of butter in microwave in medium bowl. Add powdered sugar and juice and zest of 1 lemon. Whisk to combine until smooth. Drizzle over tops of warm scones. Enjoy!
