ENERGY BITES

Howdy y’all!  I hope everyone is having a great day!  Today is officially the first day of summer break for my daughter(Bella), so we are having a fantastic day!  I love summertime so much, but it kind of snuck up on me this year.  I love the relaxed laid back feeling of sleeping in, no homework, no lunches to pack, no bedtimes, and no schedules.  Simple relaxation and fun with my girl! 🙂   Along with all that…we do need to eat and snack….often…so here is a great recipe for yummy Energy Bites from my friend, Kim.  This recipe is a bit more healthy than my usual baking delights, but my kids love them.  They are awesome to keep on hand in the fridge and munch on when you need a quick snack.  They taste like little peanut butter chocolate chip granola bars only in bite size, without all the preservatives in the packaged variety. They could not be easier to make either…Gotta love that! Enjoy!

Ingredients gathered…

So simple to make~ just mix all ingredients together in a large bowl!

All mixed together~now just pop in the fridge for 30 minutes to firm up.

After 30 minutes roll into balls, or use a small cookie scoop to make even sized balls and place in storage container with lid.(I layered between wax paper!)  Store in refrigerator and pull out to snack on anytime.  Easy Peasy!

Ingredients
  • 1/2 cup peanut butter
  • 1 cup old fashioned oats
  • 1 cup granola cereal
  • 1/2 cup mini or regular chocolate chips
  • 1/3 cup honey
  • 1 tsp pure vanilla extract
Servings: Bites
Instructions
  1. Mix all ingredients together in a large bowl. Place in refrigerator for 30 minutes to firm up. Roll into bite size balls or use a small cookie scoop to form even balls. Place in storage container with lid and keep in refrigerator. Enjoy!
