Ingredients
  • 3/4 cup butter, melted
  • 1 cup brown sugar
  • 1 cup flour
  • 1 cup quick oats
  • 1/8 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp pure vanilla extract
  • 11 oz bag caramel bits or unwrapped square caramels
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans *optional
  • 1/2 cup heavy cream

Instructions
  1. Combine caramels and heavy cream in medium glass bowl. Place in microwave and heat in 1 minute intervals, until caramels are melted. Stir together with cream until smooth. Set aside.
  2. Preheat oven to 350 F. In mixing bowl add melted butter, brown sugar and vanilla and mix until fluffy. Add in flour, oats, baking soda, and salt until crumbly. Using your hands pat half of mixture into greased or parchment paper lined 8x8 pan and bake for 10 minutes at 350 F. Cool for 1 minute.
  3. Sprinkle chocolate chips and nuts over partially baked crust. Pour reserved caramel mixture over the top. Crumble the other half of dough over the top of caramel mixture. Bake for 16-20 minutes, until lightly browned around edges. Cool for 2 hours and cut into bars.
