French Caramel Apple Tart

Hi Guys!  I thought you might need a little Monday pick me up and this wonderful French Caramel Apple Tart fits the bill.   I made this last Thursday and EVERYONE loved it!  I am drooling just looking at the photos again.  So yummy!!!

We had a super fun weekend away and totally splurged on the calorie count I am afraid to say.  Ha!  I went with the hubby on a work conference to Oklahoma City and totally fell in love with the Bricktown area.  It has the coolest riverwalk which winds around a little treasure of an area with restaurants and bars galore.  It is food Heaven for sure!

Okay, so back to the fabulous French Caramel Apple Tart.   This is actually an Ina Garten(Barefoot Contessa) recipe.  I just changed it up a bit and added the CARAMEL twist to it.   Because we all know that caramel just goes with apple, it is a match made in heaven!   The caramel sauce is also wonderful as a topping for ice cream and excellent on bread pudding as well.  Even if you do not make this tart, do yourself a favor and make this caramel sauce (and try not to drink it by the gallon) you will not be sorry!!!

In case you are not a caramel fan, you can always make the tart the way Ina Garten does and brush with an apricot glaze and it will still be wonderful.   You can find Ina’s version of the tart Here

The crust covered with the sliced apples, sprinkled in sugar, dotted with butter, and ready for the oven.

 Pretty darn simple, but GLORIOUS!

Baked until browned and apples have softened and carmelized a bit.  Don’t worry about the

juices that run off and burn a bit…adds to the rustic french charm! 🙂

Now cut a big slice and get your caramel sauce and vanilla bean ice cream ready…

Pour caramel over the top and add a scoop of the ice cream…

And if you really love caramel like I do, pour a little more over the top of the ice cream!

Grab a fork and devour immediately!!!  Enjoy friends!!! 🙂

FRENCH CARAMEL APPLE TART

Ingredients
For The Pastry:
  • 2 cups flour
  • 1 Tbls sugar
  • 1/2 tsp salt
  • 12 Tbls cold butter, small diced
  • 1/2 cup icewater
For The Apples:
  • 4 large Granny Smith Apples
  • 1/2 cup sugar
  • 4 Tbls butter, small diced
For Caramel Sauce:
  • 1 1/2 cups brown sugar
  • 4 Tbls butter
  • 2/3 cup white corn syrup
  • 1/2 tsp salt
  • 3/4 cup evaporated milk

Instructions
For Pastry:
  1. Place flour, sugar, and salt in bowl of a food processor; pulse a few times to combine. Add cold butter and pulse about 12 times, until small pea sizes form. Add water down feed tube while running on low and mix until dough comes together. Pour out on floured board and knead until dough forms a ball. Wrap in plastic and place in refrigerator for 1 hour.
  2. Once dough has chilled for an hour. Preheat oven to 400. Remove dough onto floured board and roll out to a 10x14 rectangle. I fold up the sides a bit to form like a pizza crust. Place in refrigerator while you prepare the apples.
For Apples:
  1. Peel apples and slice apple in half through stem. Remove core and stems using a sharp knife and melon baler. Slice apples into 1/4 inch slices.
  2. Place apple slices overlapping down the tart in 3 rows. Sprinkle the 1/2 cup of sugar evenly over the apples and dot with the butter. Bake 35-45 minutes, keeping an eye on pastry(juices burn quickly!) While Tart is baking make the caramel sauce.
For Caramel Sauce:
  1. In saucepan, melt butter and mix in brown sugar, corn syrup, and salt. Bring to a boil and boil for 1 minute. Remove from heat and add in evaporated milk. Set aside to cool a bit.
To Serve:
  1. Slice tart into 6 slices on dessert plates and cover with caramel sauce. Top with vanilla ice cream and more caramel sauce for a truly decadent dessert. Enjoy!

      I hope they love it! Apple desserts are Dakota’s favorite as well! He loves apple pie, but from now on I will be making this…so much easier and faster to make…and with vanilla ice cream and caramel sauce it is scrumptious!!! xo
